Bacalhau fresco com batata doce no forno Fresh baked cod with sweet potato

Ingredientes/Ingredients 

– Bacalhau fresco/ fresh cod
– Camarao/ shrimp
– 1/2 copo Vinho branco/ 1/2 cup white wine
– 1 colher de sopa de Vinagre de vinho tinto/ 1 tbsp red wine vinegar 
– Azeite a gosto/ olive oil to taste
– Sal a gosto/ salt to taste
– Pimenta preta a gosto/ black pepper to taste
– 1/2 Pimentao vermelho e amarelo/ red and yellow peppers
– 1/2 cebola / 1/2 onion
– 1/2 batata doce/ 1/2 sweet potato
– 3 dentes de alho/ 3 cloves garlic

 

  1. Pre aquecer o forno a 180 graus C.
  2. Numa frigideira de ferro ou num pirex que possa ir ao forno, colocar a cebola as rodelas, o alho, o pimentao vermelho e amarelo e a batata doce. Colocar o bacalhau e camarao por cima, temperar com sal e pimenta preta. Colocar os vinhos e azeite.
  3. Deixar assar por 25-30 minutos.

  2. Put the onion rings, garlic, red and yellow pepper and sweet potato in an iron skillet or pyrex that can be baked. Put the cod and shrimp on top, season with salt and black pepper. Put the wines and olive oil.
  3. Bake for 25-30 minutes.

Filete recheado com espinafre e queijo Philadelphia

Ingredientes:

– 4 filetes

– 4 colheres de sopa de queijo Philadelphia

– 1 copo de espinafres frescos ou frisados

– sal e pimenta preta a gosto

– 1 colher de sopa de azeite

– 1/2 copo de vinho branco

Preparação:

– Pre aqueça o forno a 180 graus C.

– Tempere os filetes com sal e pimenta preta. Num dos lados do filetes coloque uma colher de queijo Philadelphia e espinafres. Enrole e segure com a ajuda de dois palitos e de dentes.

– Numa assadeira coloque o azeite e o vinho. Coloque os filetes por cima e vai ao forno por 12-14 minutos.

Pode servir com salada de tomate e pepino.

Apple pie tacos

INGREDIENTS

  • 5 flour tortillas 8-inch is ideal
  • 4 tbsp unsalted butter divided
  • 3/4 cup sugar divided
  • 3 tsp cinnamon divided
  • 4 Granny Smith apples peeled, cored and chopped
  • 1 tbsp lemon juice fresh squeezed
  • 1/4 cup caramel sauce optional
  • whipped cream optional

INSTRUCTIONS

  1. Preheat oven to 400F degrees. Set aside a 12-cup muffin pan.
  2. Cut 4-5 circles from each tortilla using a circular cookie cutter until you have ~25 total. Place the piece into a large mixing bowl and add 2 tbsp melted butter, 1/4 cup sugar and 1 tsp cinnamon. Toss until coated.
  3. Flip the muffin tin upside down. Place the tortilla pieces in between muffin cups according to the video. Bake 6 minutes.
  4. Meanwhile, mix the chopped apples with lemon juice and the remaining sugar and cinnamon. Saute in a frying pan over medium heat with the remaining butter until soft.
  5. Remove tacos from oven and spoon apple mixture into them. Then top with caramel sauce and whipped cream. Serve and enjoy!

Healthy banana waffles

  • 1½ large bananas, ripe to overripe (200g; 7 oz)
  • 2 eggs
  • ⅛ teaspoon baking powder
  • Maple syrup, butter, or blueberries, to serve
Instructions
  1. In a mixing bowl, crack in the eggs and add in baking powder. And whisk to combine.
  2. In another bowl add in 1½ large bananas. Lightly mash with a potato masher or a fork, but not too much. There should be chunks of bananas to make fluffy waffles. And use only ripe bananas.
  3. Pour wet mixture into mashed bananas and stir to combine.
  4. In a waffle maker, cook for 10-12 minutes. Serve with fruits (blueberries, figs or another fruit)and whipped cream. Enjoy
